The sea urchins are purchased in Fisterra, O Grove and Aguiño fish markets.
They are taken from the sea by divers during its fishing season: January, March and April, in order to guarantee its best flavour.
Traditionally consumed in the north of Spain and also increasingly used by haute cuisine chefs. The taste of the sea, its aroma and the softness of its texture will amaze you.
To prepare them, the gonads (roe) are cut and extracted with a small spoon. Then they are washed and selected.
Recommendation: The best way to try it is on toast, scrambled or directly from the can, with a few drops of lemon.
