Don Zoilo is a unique dry Oloroso with an oxidative aging in the Criaderas and Soleras system, in Jerez. With a minimum average ageing time of 12 years, it stands out for its intense memories of nuts, noble woods and walnuts with a dry and slightly acidic palate, with a lot of body and persistence.
Don Zoilo Oloroso is made from the Palomino grape variety, 100% of which is made from the "mosto de yema" or yolk must.
For its aging, the wine is headed above 17º, which causes an exclusively oxidative ageing. It stands out for its smoothness and elegance.
